(Gibson) To mark Pancake Day in the U.K., Blur bassist and now Sun newspaper food critic, Alex James has offered some tips for making perfect pancakes."Today is Pancake Day. The idea behind Shrove Tuesday was to use up all ingredients in the store cupboard before fasting for Lent," he wrote. "This is my kind of cooking, and there's always a great sense of anticipation leading up to Pancake Day. "The perfect recipe is 4 oz. (119 g) of plain flour, a pinch of salt, two eggs and half a pint of skimmed milk. You also need a little butter for cooking. Sift the flour through a sieve, which is actually quite satisfying, and then make a little well for the eggs. Like a volcano. Whisk in the eggs and fold in the milk so the consistency is like thin cream – you're in business. more on this story
